They are totally hand made in Shikoku, laminating high speed steel so they do ‘seem to float in the hand and slice as if by magic’. Gold Kitano Set of 2

Made in a small workshop in the outskirts of Osaka in an area close to Sakai these 3 layer knives have a central core of VG10 No1. A compact range it represents the 4 most popular shapes. These knives are fully roll forged from a thicker blank than our Warikomi Collection (which uses the same steel). Therefore greater pressure was required to achieve a similar eventual thickness. This extra pressure has resulted in a slightly denser blade with a more aligned molecular structure which will stay sharper longer and is equally easy to resharpen. The hardness after final quenching is an outstanding 60:62 HRC. This is a good alternative to our Tamahagane Collection if a Multi-layered Damascus blade is not a priority. The handle is crafted from pakkawood to further enhance the quality and ensure longevity.
    Knives come in individual boxes.

High Carbon Knives set of 2

These ultra sharp knives are forged from a High Carbon Steel. This steel assures the sharpness of the knife is surgical whilst being consummately easy to resharpen. They have been especially made for us by a long established factory in Seki city that produces a very quality knife for department stores and chain stores in Japan. These blades will oxidise if left damp or wet and should be dried immediately after washing and oiled with a little vegetable oil or Tsubaki (Camelia oil available in the accessories section). These knives are very easy to sharpen on a KC100 Water Wheel, a diamond steel or a 1000 grit whetstone.

JKC R2 Cowbone Gyuto (3 sizes)

Gyuto literally translates as ‘cow sword’ and is the Japanese interpretation of a European chef’s knife. Its wide base tapering to an extreme point provides a curved edge, enabling the traditional French roll cutting on the board technique to be performed comfortably. The 180mm is the smallest Gyuto available and is just long enough to fulfil a multitude of home cooking requirements, from medium carving and slicing jobs to the prep of most fruit and vegetables. The curved profile facilitates easy roll cutting on the board. Medium size length is the most popular size for both professionals and experienced cooks looking for a blade long enough to cope with most tasks from slicing, dicing & mincing to filleting, carving and chopping. Large size length is for those comfortable with a long, weightier blade and is often the preferred choice of busy chefs. SPECIAL NOTES: Hand wash only. 13. JKC R2 Ironwood Gyuto (3 sizes) JKC R2 Ironwood Gyuto (3 sizes)
    New

JKC R2 Ironwood Gyuto (3 sizes)

The Saji R2 Ironwood Gyuto is probably one of the most desirable chefs' knives money can buy. Gyuto – meaning cow sword, is designed to make light work of slicing, dicing and filleting raw meat and fish. It is the Japanese adaptation of the classic French cooks' knife. This familiar looking blade represents optimal versatility as it tapers from broad base to narrow point allowing efficient contact cutting, slicing and occasional carving. The curved edge profile facilitates easy rolling action. The Gyuto is narrower, making it able to cope with fatty, starchy, oily or any other foods that have a tendency to stick to the side of the blade. If you require the knife to cut more raw / cooked flesh (meat or fish) than vegetables and want to double it up for occasional carving or only use/prefer a classic western style shape, then the Gyuto is ideal. SPECIAL NOTES: Not to be used on bone or for ANY kind of twisting or prising. CUT ONLY on wood or HDP. Do not allow Knives to be abused as screwdrivers, tin openers or for any use other than food preparation. ONLY FOR CULINARY USE. Includes: One Free Sharpening

  14. JKC R2 Ironwood Paring 90mm

This versatile paring knife size is ideal for everyday tasks. Designed primarily for use in the hand the classical pointed tip makes easy work of tricky jobs such as removing eyes from potatoes. For those who prefer smaller knives this little blade will prove invaluable, whilst for professionals and keen cooks it is a must for intricate work like fluting, peeling and paring. SPECIAL NOTES: Hand wash only. Not to be used on bone or for ANY kind of twisting or prising. CUT ONLY on wood or HDP. Do not allow Knives to be abused as screwdrivers, tin openers or for any use other than food preparation. ONLY FOR CULINARY USE. Includes: One Free Sharpening

  15. JKC R2 Ironwood Santoku 180mm JKC R2 Ironwood Santoku 180mm
    New

    JKC R2 Ironwood Santoku 180mm

Santoku literally translates as ‘three benefits’ – slicing, dicing and mincing of vegetables, meat and fish and is the classic Japanese chefs’ knife shape. This shape is now becoming a byword for anyone looking for a Japanese style blade. With a wide blade with a relatively straight edge this is the perfect knife for general food preparation. In a professional kitchen this shape is best for the prep, garnish and vegetable sections. In profile, the blade is straight for about 60% of the edge and then curves softly to the tip. The breadth of this gently curved blade is ideally suited for resting against the knuckle for total control and speed as well as complete safety when chopping straight down using the very back of the knife for grater like mincing of garlic, ginger etc.

  16. JKC R2 Ironwood Slicer (2 sizes) JKC R2 Ironwood Slicer (2 sizes)
    New

JKC R2 Ironwood Slicer (2 sizes)

The Sujihiki is a long narrow blade designed for slicing raw or cooked flesh (meat, poultry, game & fish) with consummate ease. The reduced surface area means that even the most fatty or oily flesh does not stick to the side of the blade. Whether you want transparent slices of Carpaccio, to glide through carving the Sunday roast or to portion fish or meat this blade will transform these tricky challenges into satisfyingly pleasurable rituals.

    JKC R2 Ironwood Utility 150mm

The Saji R2 Ironwood Utility 150mm utility blade has extra versatility and allows for easy filleting of fish and game. The Utilty is the most familiar to western eyes and makes a wonderfully comfortable general knife for less experienced cooks. It is actually designed for performing intricate tasks such as fluting, peeling and paring or working on fish and small game. SPECIAL NOTES: Not to be used on bone or for ANY kind of twisting or prising. CUT ONLY on wood or HDP. Do not allow Knives to be abused as screwdrivers, tin openers or for any use other than food preparation. ONLY FOR CULINARY USE.

    New

    Miyabi 5000MCD set of 2

The MIYABI 5000MCD series of knives combine perfect functionality and ergonomics with a unique design. Each individual knife is an authentic masterpiece made in Seki City, Japan using traditional Japanese craftsmanship in synergy with modern technology and materials to create a blade of the highest quality that is unmatched by any other commercially produced knife. The extremely hard core of Micro Carbide MC63 powder steel is encased in 100 layers of steel of two different grades of hardness. A special blade treatment alters the surface structure of every layer, giving each blade its individual pattern and then given its authentic Japanese Honbazuke honing by hand. The tempering process results in a central core hardness of 63 HRC after final quenching. Each knife has a unique Katana cutting edge, a visible sign of master craftsmanship that is reminiscent of the blades of Japanese swords. Traditionally, these swords received their individual Hamon, the line dividing the less hard blade body from the extremely hard cutting edge, by hand. Each handle is made of top-quality Masur Birch and is totally unique. The structure of the wood out of which the handle has been crafted is revealed through the interplay of lines and stripes. The warmth of the natural wood contrasts attractively with the steel blade. A mosaic pin and decorative end cap provide the finishing touches to this sophisticated look.
