Diamond Sharpener

Many people prefer using traditional steel for the regular maintenance of their knives. Whilst the Japanese do not use this method of sharpening as a rule, most Europeans have only ever used this system and are therefore conversant with the proper use of a 'steel' and are able to get very good results. It is without doubt the most widely sold piece of sharpening equipment in Europe.

Traditional steels are made from high carbon steel with grooves - this relies on speed and force (in most cases a combination of the two) to realign the edge. Modern steels tend to have abrasive surfaces (diamond coated steel or ceramic). This means that the realigning is done by grinding and so requires less effort - we find that a 'diamond steel' whilst getting a good result is very abrasive and cuts too much of the metal thus reducing the life span of the knife. The Ceramic steel is a wonderful tool in the right hands and gives exceptional results.

The JKC CSW 18 is currently the only Ceramic steel available that has not only a very fine abrasive surface, but part of the steel is also grooved. This not only makes the steel more versatile - it can be used for both rough and smooth sharpening - but ensures that the abrasive surface does not get 'clogged' up too quickly, thus giving the steel a longer life.
