Serve chilled over ice, great on a hot summer's day. It will keep indefinitely.
Makes approximately 4 pints.
- Ingredients
- 1kg (2 lbs 4 oz) Green plums, washed, dried and stems removed
- 675g (1½ lbs) Sugar
- 4 pints Shochu or Gin
Method:
1. Place 250g (9 oz) plums in a sterilized glass jar, pour 150g (5½ oz) sugar on top. Cover the sugar with another 250g (9 oz) plums followed by a layer of 150g (5½ oz) sugar, repeat these layers until all the plums and sugar have been used up. You should end up with 4 layers.
2. Carefully pour in the shochu or gin and seal tightly. Leave in a dark, cool place, without disturbing for at least 3 months. It is even better is left for a longer time.
