Takohiki – Known as an Octopus slicing knife the shape is almost identical to the Yanagiba except it has a very straight edge making slicing of slippery textures much easier. Once again this style of knife makes a wonderful carving blade.
SPECIAL NOTES: This knife should not be used for ANY kind of twisting or prising. Do not use on bone or frozen foods.
