Known throughout Japan for his unparalleled skill at forging Yasuki - Aogani No 1 blue steel Murata san is revered for his ability to create blades so sharp and well balanced that he is currently rated as one of the worlds top knife makers. His one off, hand folded steel, bespoke knives are in such high demand that at present there is a 6 month waiting list despite the price tag which can be as high as £3000 for a single blade!
Renowned Yasuki steel from the Shimane Prefecture was the material used in the making of fine Samurai swords. It is so rich in Carbon and Tungsten (1.3% & 1.5% respectively) that the forging and tempering process turns the outer layer of the blade black through oxidisation. This is why the traditional Japanese Nakiri (vegetable knife) is black.
