Artisan - To the best of our knowledge, the Artisan Collection is currently the only commercially available range of knives that are completely hand made, using techniques developed over centuries by Samurai craftsmen. This range of knives has been acknowledged by the most respected culinary experts to be the finest available.

These are the Samurai Swords of the kitchen. The method involves forging three layers of steel to form one single blade of immense strength, durability and sharpness. Two layers of soft Stainless Steel (SUS-405) are used to clad a central layer of 'High Speed Steel'' (SRS-15) a material rich in carbon and so hard that it is generally  reserved only for the manufacture of precision tools, surgical equipment and dentist drills. With the flexibility of the 'soft' cladding and the strength of the centre, these handcrafted knives are perfectly balanced and a joy to use.

The many professional chefs using these knives are a testimony to their pedigree. Perfect for those cooks who will not compromise on quality and insist on the best.

The collection comprises of eight knives, which when required can be simply re-honed using KC-100 JKC Water Wheel Sharpener or K1-001 JKC Whetstone Kit. From the small 120mm (~4½") blade increasing in 15mm (~ ½") increments up to the all purpose 180mm (~7") and two larger blades of 210mm (~8¼") and 240mm (~9¾")
