Blades that look so radically different that at first glance you may not believe your eyes, they are Zirconium Ceramic, completely non metallic, finished in translucent white or black. With appropriate care and use these revolutionary culinary implements can maintain their spectacularly keen edge for years without needing to be sharpened.
The primary component is Zirconium, a material second in hardness only to diamond, that was originally developed to tile the exterior of the space shuttle. Being non metallic the Ceramic knife cannot rust or emit metal ions which affect the taste and colour. From slicing salmon to chopping onion or cutting avocado, the flavours, as long as the knife is lightly rinsed in between, will not transfer from cut to cut. The purity of food is not effected and the annoying browning that metal blades cause on delicate food like lettuce does not occur.
The Black Ceramic knife is fired at an immensely high temperature (using a unique, closely guarded process known as "Hot-Isostatic-Press") to create a blade of extraordinary sharpness and durability. Only one Black blade is made for every 75 white blades making this a highly sort after piece. Perfect for the preparation of fruit, vegetables, filleting fish & meat. Due to its extreme sharpness and despite its wonderful lightness, the knife needs little or no pressure to cut. It requires minimum maintenance and if necessary can be re-sharpened using our diamond sharpener.
Please note these knifes are designed for slicing only, they should not be used for impact cutting, violent chopping or bone as they are brittle and if misused prone to damage.
