Ginger Pork

Ginger Pork

Ingredients

2 Large shitake mushrooms per person
Oil for frying
1 Pork loin per person cut ¼ inch thick
½ Tbs. sake
1 Tbs. Dark Soy
¼ Tbs. Mirin
½ Tbs. Ginger juice

Method

Heat oil in a large frying pan and fry the pork on high heat till the meat is lightly brown, turn heat to low and cook uncovered on the other side for 2 minutes. Turn over and cook the browned side for 2 more minutes or until fully cooked. Set aside in a warm oven.

Pour out all but a couple of tablespoons of the fat from the pan and whilst still hot add the Sake, Mirin, Soy and Ginger Juice and deglaze the pan. Cut mushroom into 1/3 inch slices at an angle add to the pan and fry for a minute or two.

Cut the warm fried pork loin into 1 inch strips. Pour the Mushroom sauce over the top and serve.
