Smoked Salmon & Cream Cheese Nori Rolls
As some European palates find it hard to accept the flavour of cold rice and raw fish I have substituted more acceptable ingredients whilst maintaining the presentation of these ‘European Sushi Nori Rolls’
2 Nori Sheets cut in half along the embossed lines
Good quality white cream cheese
Smoked Salmon – very finely sliced
4” piece of cucumber
Cut the cucumber lengthways in half, then half again and then half again. Slice off the soft core with the seeds in it. Slice and slice again until you have very thin strips of cucumber.
Soften the cream cheese by kneading it with a warm spoon in a glass bowl.
Spread the softened cheese onto the Nori sheets – about ¼” thick.
Place the smoked salmon slices in the middle. Trim off any overhang.
Using a bamboo rolling mat – roll the Nori into a log as shown.
Place the ‘log’ in the fridge until the cream cheese is hard again.
Slice each log into 8 pieces and serve.
