The 240mm is great general carving and filleting length for those preparing large joints of meat and medium sized fish. This blade has the capacity to undertake demanding domestic tasks without effort. If preparing sushi or sashimi is your objective the Suradai yanagiba will slice through the crispest Nori sheet with intense delicacy and slice through the flakiest fish without disturbing the grain pattern. The narrow blade glides through the most challenging flesh like butter.
Yanagiba translates to Willow Leaf. This is the most popular shape of knife used in sushi restaurants the world over. This classic Japanese single sided knife is unsurpassed at cutting the finest slices of food. Generally used for filleting fish this knife makes a wonderful carving blade for wafer thin slices of meat. With its one sided edge this traditional Japanese knife is designed to cut very fine slices without affecting the shape of any food being cut whilst also providing the equivalent of the granton affect with the very slightly dipped back of the blade providing a small oxygen pocket along the length of anything being cut.

Blade construction: Total of 17 layers using VG10 for cutting edge with soft stainless steel for outer layers.
Handle construction: D shaped red sandalwood handles with black collars.
Cleaning: NEVER DISHWASH SHARP KNIVES. Ideally all sharp blades should be washed quickly after use with Very hot water and domestic detergent.
Sharpening: JKC whetstones ONLY. NEVER TRY TO SHARPEN KATAHA BLADES WITH sharpening rods, as this will cause edge to crumble. The of use automatic or electric sharpening systems for these extremely sharp, right hand bevel blades WILL RESULT IN DAMAGE.
Storage: In wooden shield or saya. JKC SURADAI KATAHA collection have tailored black wooden saya’s for every knife in this collection. These blades can be stored on large magnetic block or using magnetised rubber shields, the packaging box/ separate area in knife drawer/magnetic knife bar.
