This style of knife is called Usuba. What more can we say about this most popular blade that has not been said by those that are the lucky owners of this classic Japanese fruit & vegetable knife. Like all New Tradition knives it is single sided and will require a little practice to get the best out of the knife.

From slicing tomatoes to creating transparent cuts of cucumber this is the definitive shape of blade for those who prepare vegetables regularly. With practice the abilities of this style of blade are unsurpassed. The wide blade makes any kind of 'slice' or 'push cut' technique wonderfully comfortable. Chopping herbs is no longer tedious but a joy!

The 15361WS is 165mm (~6½") in length. The length of this blade with its flat edge is ideal for slicing, dicing and chopping. The width of this blade means that once cut, the food can be scooped up in one movement straight into the pan. With its razor sharp, High Carbon layered with soft stainless steel, blade this knife will tackle most jobs with consummate ease. Indeed with its brothers the Kodeba, Kaisaki and Santoku it is the favourite of the Japanese housewife as well as chefs.

Please note that as result of the tremendous amount of publicity and accolades that have been granted the New Tradition Collection there are several copies now on the market. It should be remembered that with its single sided edge, for ease of maintenance, this style of knife should always be constructed from High Carbon Steel NEVER Stainless Steel. If you are seeking the best, then like all JKC New Tradition knives, it should be layered with soft stainless steel for weight, strength and shock absorption. 

This knife comes with a beautiful custom made wooden sheath for ultimate protection.

Cleaning - NOT RECOMMENDED for Dishwasher. Hand wash - mild detergent.

Storage - In the wooden sheath / in the packaging box / separate area in knife drawer / magnetic knife bar.
