Deba roughly translates as short and fat! This very heavy knife is designed to remove clean fillets of fish from the bone without disturbing the natural pattern of the flesh. The thick spine and heavy weight makes it ideal for cracking crab shells and other crustacean as well as tenderising meat. Without doubt this is also the finest chopping knife to come out of Japan.

The 15353 are 180mm (~7") in length. Intended ONLY for those that know how to wield such a heavy blade regularly, this large heavy blade is designed for those that prepare large amounts food daily. The very thick blade will cut through any food without any pressure or effort and slice through the flakiest fish without disturbing the grain pattern.

Please note that this knife with its single sided blade will travel through the cut at an angle and should only be purchased by those that have the ability to handle such weight and sharpness. It is definitely not for the meek

Please note that as result of the tremendous amount of publicity and accolades that have been granted the New Tradition Collection there are several copies now on the market. It should be remembered that with its single sided edge, for ease of maintenance, this style of knife should always be constructed from High Carbon Steel NEVER Stainless Steel. If you are seeking the best, then like all JKC New Tradition knives, it should be layered with soft stainless steel for weight, strength and shock absorption.

This knife comes with a beautiful custom made wooden sheath for ultimate protection.
