
As we have stated many times before and our regular customers know, we are constantly looking for knives that offer better performance, value and aesthetics.
Over the past few years Damascus knives with a hammered finish like our 49 Layer Takayuki and 45 Layer Hammer Collection have been very popular. These knives are popular with both customers seeking Uber performance as well those attracted to the Artisan look.
With this in mind, we have developed a range of hammer finished knives that are breathtakingly sharp, with an enduring edge, stainless with reduced emission of metal ions to lessen the influence on the food being cut, easy to maintain and great value.
We achieved the extreme sharpness by selecting a steel for the centre core capable of being tempered to a high level of hardness (61 +/- 1 HRC) without requiring more expensive processes than workshop roll forging and tempering – Hitachi VG10 No.1. A layer of pure Nickel Silver cladding the core ensures minimum influence on the food being cut and then 15 alternating layers of high carbon and low carbon soft stainless steel provide both final softness (for easy sharpening) and aesthetics (after aqua regia treatment). The hammer finish, normally done by hand hammering, is replicated by machine pressing (this gives the same and functionality and look as hand hammering without the cost). Of course this method cannot extract the minor impurities that hammering can but the cost difference is significant and would not be noticeable by anyone other than knife aficionados or those willing to pay for the extra performance of a hand beaten blade.
The handle has a cocobolo collar and laminated hardwood grip.
