This style of Japanese Vegetable knife is called Nakiri. The Brieto Triple Layer Professional Nakiri is constructed from a 3 layer laminated steel which is fully forged for brilliant cutting ability. With its central layer of very high Carbon steel this knife will remain sharp far longer than any Molybdenum Vanadium Stainless Steel. Not only does it have the ability to stay sharp longer but with its soft outer layers this is also without doubt one of the easiest knives to re-sharpen.
From slicing tomatoes to creating transparent cuts of cucumber this is the definitive shape of blade for those who prepare vegetables regularly. With practice the abilities of this style of blade are unsurpassed. The wide blade makes any kind of ‘slice’ or ‘push cut’ technique wonderfully comfortable. The straighter edge helps paring large vegetables such as Daikon or Cucumbers when preparing finely shredded garnishes. The slight curve at the front end assists in making the chopping of herbs a simple task whilst the wide blade is ideal for scooping up.
In recent times many European TV Chefs are using this traditional vegetable knife as multi purpose chefs knife and with its extreme sharpness and wonderful balance it tackles most culinary jobs with ease.
It should be noted that whilst shaped like a cleaver and perfectly happy chopping, dicing, slicing or mincing vegetables, this extremely fine blade is not designed for heavy cleaving of very hard foods such as fruit stones or bone and frozen food.
