This exceptionally comfortable small paring knife is ideal for delicate tasks; the classical pointed tip makes easy work of tricky jobs such as removing eyes from potatoes. For those who prefer smaller knives this little blade will prove invaluable, whilst for professionals and very keen cooks it is a must for intricate work. The central core of the 33 layer TSS Damascus Steel is a High Carbon Super Steel known as VG10. This High Carbon Super Steel has the highest recommendations in the production of knives by authorities such as the British Steel Confederation and the Solingen Institute of Steel. The Zanmai Elite Collection blades have all been hardened to 61:63 HRC and with the inclusion of Cobalt in the alloy, are easier to maintain than any other Stainless High Carbon blades. The 33 layers not only make these blades aesthetically appealing but add immense strength but with the multiple hand beating facilitating the thinnest yet strongest central core of any other similarly priced knife. In our experience the Zanmai Elite collection has amongst the sharpest, most enduring edges of any stainless blades we have come across whilst also amongst the easiest to resharpen. The ergonomic ‘round to hexagon’ shaped handles are composed of Ebony black hardwood that is laminated then injected with silicon for protection against water and is reserved for only the finest knives.
