This slim, lighter (than its Santoku brother) blade makes a wonderfully impressive SMALL carving knife. Ideal for creating awe inspiringly wafer thin slices from your Sunday joint or equally elegant cuts from fish and cold meats. Like any Artisan knife it also capable of tackling the hardest vegetables like celeriac and swede with consummate ease. If you keep your edge lovely and silky there is no reason why this relatively narrow blade should not meet many domestic fish challenges like slicing, light filleting etc with ease.

These very classically European style knives have a cutting action which only the Japanese can create. They are totally hand made in Shikoku, laminating high speed steel so they do ‘seem to float in the hand and slice as if by magic’.


Model Characteristics:

Blade construction – Triple layer with high speed steel laminated between two outer layers of soft stainless. 

Handle construction – Classic European style 3 rivets encased in laminated rosewood. 

Cleaning – NEVER WASH SHARP KNIVES IN DISHWASHER. Wash only by hand keeping sharp edge away from potential harm using any domestic washing up liquid. Rinsing with very hot water will facilitate the most essential thorough drying process prior to storing safely. Avoid leaving blade soaking in bowl of washing up. This can loosen blade from handle and more importantly is DANGEROUS. 

Sharpening – Ideally sharpening should be performed with regularity so blade is simply polished before it loses effectiveness, just as edge is fading slightly. This can be done by simply stroking blade on newspaper – a technique known as stropping demonstrated on our sharpening video. The ideal sharpening systems are whetstones. Storage – Sharp knives should always be stored so that the edge is not compromised; we sell a vast array of truly fantastic storage solutions including the Original Quarter Moon Magnetic Block and Luxury Hand Made Magnetic Block, these are the number one systems we recommend but we do have 4 other magnetic block models available to choose from. The truly luxurious way to store your new blade would be the hand made, hand embossed leather shield which can be embossed with message or crest of your own choice.

Special notes – keen edged blades should never be heavily banged on the board or used for edge stress creating tasks like twisting, prizing OR FORCING. NEVER USE FINE EDGED BLADES ON FROZEN FOOD OR FOR BONES.
